It all began with our founder's simple yet profound realization that dietary restrictions should not equate to a compromise on taste, experience, or the joy of socializing.

When our founder had to eliminate grains from his diet, he found himself at a crossroads. A passionate beer lover, he was left yearning for an experience that could no longer be fulfilled by existing grain-free or gluten-free beers. The market offerings either lacked in taste or failed to deliver that authentic craft beer experience.
IGNITING
THE SPARK
Tired of hearing "no, you can't have this" or "no, you can't do that", he decided to take matters into his own hands. He embarked on a journey starting with home-brewed kombucha, which, despite its initial lackluster taste, ignited a spark of rebellion. This was the beginning of his transformative journey to create a grain-free, gut-friendly alternative that didn't compromise on flavor or the craft beer experience.
PRIORITIZING HEALTH
As he delved deeper into the world of fermentation and beverage production, he discovered that modern production methods were designed to eliminate bacteria – the very essence of natural fermentation – in favor of longevity, mass production, and extended shelf life. This realization was a turning point. It became evident that the beverage industry had lost its way, prioritizing scale and convenience over health and authenticity.

Our founder developed a unique fermentation process that not only makes gut-friendly, grain-free drinks possible but also ensures they are shelf-stable. The Rebellion, symbolized by Brücha, was born out of a desire to rebel against the norms, to bring back the benefits that have been stripped away from our beverages, and to reintroduce the world to the art and science of natural fermentation.
